Generally in the united kingdom we think of our diet as taken from one of five food groups. The first is probably the most important and we are recommended to have a minimum of five selections from it – fruit and vegetables. Of course there are many dofferent ways of cooking vegetables, take what we amusingly refer to as the humble potato. There is absolutely nothing humble about this one. There are many varieties of potato available from those that bake well to make an excellent ‘jacket with . . . . ‘ which can involve an incredible selection of ingredients for filling and topping the cooked potato, from cheese, beans, chilli con carne; tunas and corn on the cob . . . to a combination of all those. if not wanting anything quite so lavish & filling, baby new potatoes seem to now be available all year round. They are so sweet and go well with salads and light meals just as easily as that sunday main meal of roast beef or other meat. When a lighter meal is needed, a couple of baby new potatoes work a treat, boiled with a little salt then served with a walnut sized knob of butter. Hmm sheer perfection. Then there are the carrots and parsnips – not just in winter these days. They are hearty and so tasty. Those are just the very basic of all the choices.
